Edible Soy Sauce by Shojo: Do Not Be Fooled by the Name—Try This Miso-Like Rice Companion

For souvenirs for my household or relatives, I often choose accompaniments for plain rice. Larger gift shops usually have refrigerated and frozen sections. Their products are rarely highlighted, but careful browsing reveals practical, appealing items. That is how I found this “Edible Soy Sauce.” Preparing many breakfast dishes is troublesome, so having something like this in the refrigerator is reassuring. Above all, the unusual name made me curious. I bought it at Mizunosato Sawara in northeastern Chiba.

A 250-gram jar cost ¥650. Front of Edible Soy Sauce jar Side of Edible Soy Sauce jar Since it is “edible,” this is not ordinary liquid soy sauce but a paste. Through the jar it resembles dark miso. Serving it over rice with butter sounded especially intriguing, and it is also recommended with raw egg over rice. Fermentation continues after opening and makes the flavor mellower—another pleasure to anticipate. Trying Edible Soy Sauce in several different ways

Opened Edible Soy Sauce jar It looks like very dark moromi miso. Edible Soy Sauce on a plate It certainly does not look like soy sauce. Sashimi with Edible Soy Sauce I first put it on sashimi. There is a hint of soy sauce, but its sweetness and body feel closer to miso. Large soybeans make it substantial. Personally, it was too miso-like for sashimi, where I preferred ordinary soy sauce. However, on another day I served it over white rice with butter, and it was exceptionally delicious! I became hooked on this combination for a while (^^) Melted butter and the sweet fermented soy paste blend perfectly. This was an unusual product, and I am glad I bought it. Thank you for the meal. Chiba has an amazing wealth of local products despite bordering Tokyo. Check the Chiba souvenir information below before visiting.

The jar is especially useful because a small spoonful changes an otherwise plain bowl of rice into a satisfying dish. Its whole soybeans and fermented texture make it more substantial than an ordinary seasoning. Butter was the standout pairing, but the enclosed suggestions also make it easy to experiment with eggs and other everyday foods. The flavor continuing to mellow after opening gives the product another dimension and encourages repeated use rather than a single tasting.
