The restaurant bowl was on another level. Fresh raw egg, house-made chashu, and just-boiled bean sprouts joined the garlic oil, tonkotsu broth, and straight noodles I remembered from home. Every topping worked with the soup. I bought the souvenir ramen again at Kumamoto Station so I could preserve the taste and memory.
If possible, visit the restaurant before buying the box. Regional food tastes strongest with the atmosphere of its place, and the home version later revives that experience. Still, the gift set is valuable for people unable to travel.
