Every so often, you come across a product in a souvenir shop that seems completely out of place.
Imagine a shop whose shelves are mostly filled with boxed sweets, only to find a jar of miso sauce sitting among them. In my experience, products like that often turn out to be hidden gems.
The Ichiya Miso Sauce featured here looked useful for all kinds of cooking. It was stacked high beside a banner advertising it as a Higashimatsuyama specialty, so the shop was clearly recommending it—and that convinced me to buy a jar!
I purchased it at Kawaguchi Parking Area, a compact parking area on the Metropolitan Expressway.
Ichiya Miso Sauce (Ichiya Shoji)

A 200 g jar costs ¥648.
The label says that this is a sauce brought out from the flavor storehouses of Higashimatsuyama, and that its closely guarded recipe brings out the best in whatever ingredients you pair it with.
The understated packaging has a wonderfully traditional look.

A shiny sticker identifies it as a certified premium brand product of Sainokuni, the traditional nickname for Saitama Prefecture.


The best-before date is printed on the side. The jar I bought had about eleven months remaining from the date of purchase.

My impressions after trying Ichiya Miso Sauce with cabbage and pork

The sauce is a deep reddish brown.

First, I kept things simple and tried it with pieces of fresh cabbage.


It is quite spicy, and the garlic makes a powerful first impression. You can also taste the aroma of ginger.
The miso itself is rich and full-bodied, so its flavor is not overwhelmed by the heat of the chili pepper. It pairs beautifully with the crisp texture of the cabbage—the combination feels like something you might be served at a Japanese izakaya pub.
Adding a little mayonnaise made it mellower and equally delicious. It was also excellent with cucumber.
If you enjoy a drink, this alone could keep the beer flowing for several rounds! It felt as though I had discovered another genuinely good product.
On another day, I coated slices of pork loin with the Ichiya Miso Sauce and pan-fried them, adding a little honey for sweetness.

That was delicious too!
The sauce is convenient because it works in so many different dishes, and I am very glad I bought it. It really does bring out the flavor of the ingredients.
After looking into it, I found that Ichiya Miso Sauce is stocked not only at Kawaguchi Parking Area but also at quite a few other service areas and parking areas along Japanese expressways. Keeping a jar in the refrigerator is handy whenever you want to give an everyday meal a completely different flavor.
