Otemanju: The Okayama Sweet Locals May Love More Than Kibidango

大手まんじゅう

Visitors from outside the prefecture may not know it, but Otemanju is so famous among Okayama residents that almost everyone recognizes the name. It is the kind of sweet that seems to be waiting whenever you visit a grandmother’s home.

The confection is made by wrapping smooth bean paste, prepared from Hokkaido azuki beans, in a fermented dough using Bizen rice and steaming it. The outer skin is extraordinarily thin—so thin that the dark filling can be seen through it.

It almost feels like eating bean paste by itself, yet the sweetness is controlled enough that a whole piece disappears easily. With Japanese tea, it makes an excellent traditional snack.

Eating it at room temperature is perfectly good, but small changes in temperature create different pleasures. Brief warming in a microwave softens it and lifts the aroma. Toasting creates a lightly fragrant surface and a chewier texture. In summer, some people even enjoy it frozen for a firmer, cooling bite.

Those serving ideas make a simple manju surprisingly versatile. When heating, use only a suitable plate and follow any instructions on the wrapper.

Okayama is nationally associated with kibidango, but Otemanju represents the everyday affection of local families. Its nearly transparent skin, refined paste and long familiarity make it a meaningful gift for someone interested in what residents themselves regularly enjoy.
