Even supermarket beef tongue in Miyagi tends to be thicker and better than what I later found in metropolitan supermarkets, so I had assumed that quality was normal.

Eventually a friend and I said that it seemed strange to come from Miyagi without ever visiting a gyutan restaurant, and we went to the famous Kisuke. It exceeded every expectation. The tongue was astonishingly thick, and its resilient bite completely changed my idea of the ingredient. I regretted not discovering it earlier.

The three-flavor set is my recommended souvenir. I now live in another prefecture, and whenever I return to my family home in Miyagi I buy gyutan for my husband’s family and relatives. When the budget allows, I also buy a set for our own household.

The classic salt flavor, seasoned with Ako salt, lets the natural character of beef tongue come through; it becomes more delicious as you chew. Sauce and miso are equally compelling and pair wonderfully with rice. Because many people automatically choose salt in a restaurant, receiving a set is a welcome chance to try other preparations. The sauce flavor is marinated in a mellow soy-based blend with wine and miso. The miso flavor uses an original mixture of sharp Sendai miso and sweeter white miso.

Cook all three packs for a family tasting, or, if living alone, enjoy one pack at a time over three meals. Gyutan is also excellent with drinks, including sake. Kisuke was so well known in Miyagi that I recognized the name even as a child, before ever entering a gyutan restaurant. The company helped develop charcoal-grilled beef tongue, born in Sendai, into a specialty known throughout Japan. It emphasizes ingredients, preparation, and seasoning; processing is handled at its own factory in the prefecture, with production, processing, and sales managed consistently.

The most convenient shop is Omiyage-dokoro Sendai on the second floor inside Sendai Station. It is only a few minutes from the ticket gates and particularly useful for travelers short on time. The station has a remarkable number of Miyagi specialties, but Kisuke deserves attention among them. It is an excellent request for a parent returning from a business trip, too.

Another shop is in the Food Garden on the basement floor of Sendai Mitsukoshi, inside the arcade where the famous Tanabata Festival is held. It requires a walk from Sendai Station, but the central arcade is full of shops and makes a pleasant route for browsing.

The original article states a frozen shelf life of 180 days and seven days refrigerated after thawing. Always follow the current package instructions. In our home it never lasts anywhere near 180 days. Online ordering is also available for people unable to visit, but as someone from Miyagi I am happiest when travelers discover it during a trip.
