Mori Koshiro Castella from Ginza Bunmeido: A Masterpiece of Confectionery for Someone Special

Castella is strongly associated with Nagasaki, but excellent versions are also available in Tokyo. I received this one as a gift, and it proved every bit as delicious as its elegant appearance suggested.

After looking it up, I learned that it costs around 1,600 yen. I seem to be receiving wonderful gifts all the time—thank you!

Mori Koshiro of Bunmeido perfected this castella through years of trial and error as a specialist craftsman. It is described as the culmination of his technique, a claim that makes the cake feel formal and important before the package is even opened.

That dignified atmosphere suits it perfectly, so I will keep unnecessary commentary to a minimum and introduce it mainly through photographs.

Once it enters the mouth, sweet moisture seems to spread through the sponge.
The coarse sugar crystals crunch pleasantly and provide an excellent contrast.

The exceptionally fine-textured cake is fluffy yet satisfyingly springy. It has a pronounced egg flavor and an unmistakably refined finish.

Castella’s characteristic, confident sweetness makes it perfect for a relaxing break.

For what it is worth, it tasted superb with a glass of milk! Please forgive such an everyday way of enjoying this distinguished cake.
